Peasant Bread

  • 6 cups flour

  • 2 1/2 tsp table salt

  • 1/2 tsp yeast

  • 2 2/3 cup water

Combine all ingredients in a very large bowl. Cover tightly with plastic wrap and leave it alone for 12-18 hours.

After 12- 18 hours, remove plastic wrap and set aside - you will use it again. Dump dough onto a piece of parchment paper. Spray the plastic wrap with nonstick spray and cover the dough. Let sit 1-2 hours.

About one hour before baking, place Dutch oven with the lid on, inside the oven. Heat oven to 425 F. When the oven comes to temperature, set a 30 minute timer. After 30 minutes, carefully remove Dutch oven from oven.

Remove plastic from dough and place parchment and dough into the Dutch oven. Replace lid. Bake, covered for 40 min. Remove lid and bake an additional 10-15 minutes uncovered.

Carefully use the corners of the parchment paper to remove the bread from the Dutch oven. Place bread on a wire rack to cool. Let cool almost completely before slicing.

After the Dutch oven has cooled we store our bread inside with the lid on. This usually gets eaten in a few days at our house. You could also wrap the bread in parchment paper to store. At our house, If it isn't eaten quickly it usually lasts 4-5 days. You could also store this bread in the fridge or freezer.
